Redesigning food systems is an urgent matter, a responsibility and an amazing job opportunity. By having a look at a food system designer's work, the mindset and philosophy behind we are getting knowledge about the broad working field and what you need personally and professionally to start this job and to get this job done and ongoing. 


First, I want to give you some guiding questions to consider:

What's your personal story on food systems and what's our actual quest ?

Now I want to explain to you the way through this course shortly, with the main themes and topics.

Food system design 

We are going to understand the concept of food system design and we will deal with a systemic approach to untangle complexity. And we will delete our silo mentality towards a more transdisciplinary, collaborative, co-creative approach.  

Mindset

We need a new mindset - a new SET of minds - for dealing with our current food systems problems. Learning about those different mindsets will help us to gain a holistic and systemic perspective on food systems and the global concepts behind. You will be able to look at your food system through a systemic lens. And you are going to apply the planetary health diet, as a global concept, onto your local food system. With the aim to find out how your future food system will taste like! 

Localization 

We will deal with the approach and methodology of transformative innovation to work with the concept of localization and re-regionalisation within our own food systems. With the guiding question: “How can we redesign more resilient & regenerative food systems within our bio-regions?” Therefore you are going to explore your local food system. You will be mapping it out, small or big, while mindfully moving through your food system, wherever you are located in the world.

Food Innovation Ecosystems

How do we even start this process and what needs to be done in order to challenge your food system? We will have a look at what food innovation ecosystems are and what they need to be nourished and set up. 

Local case study 

After talking about concepts, frameworks, philosophies we are going to dive into a local case study. I will show you how I developed a local food innovation ecosystem within a special region - combining tradition and innovation. 

Innovation in place 

After this it is going to become a bit more personal because I am talking while walking in the woods about how I found innovation in a special place while dealing with my own roots.

Food, forest, edible event

I am dealing with the questions: how to innovate in a very traditional region and I will present you an edible experience event: Where local gastronomy and chefs were applying the global concept of a planetary lifestyle and diet to their own restaurants. Inventing quite special menus, making the people value the food in front of their door more.

And at the end - I will equip you with guiding principles for your projects - in order to make you successful in your mission to transform your own food system while becoming a food preneur!
